The second Algerian Couscous Festival concluded this Saturday in Tizi-Ouzou after a three-day celebration held at the Thamaghra leisure park. Participants from across all Algerian provinces gathered to celebrate the iconic national dish, showcasing ancestral culinary techniques passed down through generations. Organizing committee members Sabrina Khelifa and Idir Saoudi emphasized that the event serves to promote national heritage and cultural identity. Women from regions like Illizi and Tébessa presented distinct, locally-sourced recipes that reflect their unique regional traditions. Highlights of the event included a grand buffet featuring twenty-three different versions of couscous prepared by chef Mhamed Raïssi, alongside a live demonstration of traditional hand-rolling of semolina by local resident Zhira Belkebir, illustrating that the dish remains a vibrant mosaic of Algerian terroir.
